Organoleptic analysis

Color: Pale pink

Perfume: hints of red and black fruits stand out

On the palate: Fresh, savory with long persistence

Grapes variety: Nebbiolo, Vespolina, Uva Rara

Production area:  Upper Piedmont in the municipality of Boca (Garona sub-area).

Harvest: Early/mid September, the bunches are collected in boxes of approximately 20 kg and selected manually.

Vinification: Soft pressing at low speed, fermentation at low temperature to favor the exaltation of the typical varietal compounds. The sparkling wine base thus obtained ages for a few months in steel on the fine lees with weekly batonage. After spending the months on the lees we move on to bottling and subsequent refermentation. The bottle refinement on the yeasts lasts 48 months.

Gastronomic pairing: Ideal as an aperitif with oysters and caviar, white meats.

Serving temperature:  8°÷10° C.
