Peach, amaretti and chocolate delight

Ingredients for 6-8 servings
- 2 tin preserved peaches in syrup
- 175g sugar
- 150g butter
- 2 eggs
- 150g of plain flour
- 1 box of “amaretti” biscuits (250 g)
- Abundant unsweetened cocoa powder
- 100g dark chocolate crushed into a powder
- 1 vanillin sachet
- Half a sachet of dessert baking powder
- A pinch of salt
Preparation
Line a round cake baking tin with baking paper.
Cut the peaches into half moons and place them on the bottom of the baking pan.
Crush the amaretti almost into a powder and place them on top of the peaches.
Sprinkle with abundant unsweetened cocoa and dark chocolate crushed into a powder.
Beat the egg whites into a foam, add the yokes, the sugar, the butter melted on a very low heat and a cupful of peach syrup.
Add the flour mixed with the baking powder, the vanillin and a pinch of salt.
Pour everything on top of the amaretti biscuits.
Cook on a moderate heat (approximately 170°) for approximately 45 minutes.
Let cool and remove from the tin turning the cake over so that the peaches are on top.
